Beans And Quinoa Medley-- Part 1

This simple dish makes a great addition to salads, but can also stand alone as a full meal.

  We whipped up this simple dish with ingredients in our cupboard and ate it as a full dinner (very filling!), but you could easily have it as a side dish if you want. If you've been meaning to add more super-healthy quinoa to your diet, this is a great way to do it. You can also substitute this recipe with rice, too. Broccoli Cheddar Soup- Part 3

The big reveal!

We enjoyed our soup with hunks of Italian bread, but if you can find or make some sourdough bread bowls, that's a great way to eat this soup (what's better than EATING your bowl when you're done??). For some variety, you could add cauliflower to the soup, substitute it for the broccoli, or try adding in crumbled bacon.  Enjoy!

Grilled Eggplant And Basil Sandwich--Part 3

The big reveal!

If you want (or if you have power), you can pop the entire sandwich (open) into a toaster oven or under the broiler for a minute to melt the cheese.  For variety, you could try adding other greens or herbs. And instead of eggplant, you could satisfy the carnivores in your family by adding grilled chicken instead. There is quite a bit of versatility in this sandwich, so we hope you enjoy it!
